I kid you not. Today is a day set aside for celebrating the creamy concoction of rum, pineapple and coconut! So, in preparation for this momentus occasion, I have been trying (and perhaps perfecting) pina colada recipes. File that under “taking one for the team”
After some deep personal reflection, I have learned that the perfect pina colada requires a frozen element, some lime juice to temper the sweet and that to obtain enough coconut flavour, Malibu rum is essential! Incidentally, I also discovered (while looking for the frozen pineapple) that I have enough frozen fruit to save the entire world from scurvy. Oops! better get making some smoothies! I wonder when international frozen fruit day is?
I know there are more pressing matters in the world. Maybe that’s why we have these silly days. So we can set aside the important for a bit and just take a moment to celebrate a cocktail. Unwind, be still, focus on the frosty, creamy coconut concoction… picture yourself here…
Ha! And finally, if possible, get that ear worm of a song out of your head. You know the one I mean…

- Blender
Ingredients
- 1 cup Frozen pineapple chunks
- 2 oz Malibu rum
- Juice of 1/4 lime
- 1/2 cup Cream of Coconut
- 1/2 cup Pineapple juice
Instructions
- Combine all ingredients in a blender. Blend until smooth
