I love chocolate.
Love it!
Shouldn’t eat it though. I am sad to say, it makes my chronic illness much worse. It’s the sugar that is the problem so I go off sugar regularly, and then I fall back into the sugar trap. Even though I KNOW it’s bad for me!! Even though it makes me feel terrible!! Goes to show how addictive it is… that tasty little poison has it’s hooks in me alright. I can empathize with anyone who is trying to avoid sugar or give it up altogether. I know how hard it is.
The good news is when you do break the sugar habit, you crave it less (until you start with the “I’ll just have a bite” thoughts) So, when I am off sugar I have found some “cheats” that still allow me to enjoy some chocolate. Because what is life without a bit of chocolate? M’I right?
The Russel Stover no sugar added “Truffle” chocolate bar, available at Walmart. Just the right balance of dark chocolate with no sugar substitute after taste! One square a day keeps the cravings away!
Homemade hot chocolate (Quick and easy)
2 Tbsp cocoa powder
1 Tbsp maple syrup
250 ml cashew (or other) milk
Combine cocoa and maple syrup. This takes a lot of stirring, keep going. When combined add cashew milk, stir. Heat in microwave for 2 minutes, stiring once.
Finally, Nut-Free Dream Bars from “Oh She Glows Every Day” by Angela Liddon. I love the crunchy bottom and they are quick to make. I use peanut butter though because we don’t need to avoid nuts in our family. And I replace the chocolate chip topping with a mixture of cocoa, maple syrup and coconut oil to avoid the sugar. If you make these, be sure to tell the kids that you made sugar-free, gluten-free squares. Tell them they are in the freezer, help yourselves! Trust me, you will get them all to yourself!
